Time Served
Time Served
Time Served begins with a real Belgian dubbel, brewed in Belgium on Pilsner, Munich and caramel malt and fermented with a spicy, estery Belgian yeast that gives it a dark, fruit-forward character.
We double distilled that beer in 100% copper pot stills, put it into new American oak (char #3) at 119 proof, and locked it up for six full years. No shortcuts, no early release. When the sentence was up, we brought it down to an easygoing 94 proof so the dubbel's dark, malty backbone comes through clean.
On the label, our fox sits it out the only way he knows how: shackled, eyes closed, waiting for the clock to run past seven. This is the whiskey he was waiting on.
