A little Belgian mischief

Not your usual whiskey.

SponTawny begins as an authentic Belgian Dubbel — a dark, fruit-forward ale built on Pilsner, Munich, and caramel malt, fermented with a spicy, estery Belgian yeast strain.

Double distilled in 100% copper pot stills, cut and proofed to 119 proof, it was laid down in a new American oak barrel, char #3, where it aged for six years.

Before bottling, it rested in a fresh-dump Tawny Port cask, drawing out layers of dried fruit and toffee that echo the dubbel’s own dark, malty character.

The long way around

Beer became whiskey. Whiskey met Port.

There are no rules.

Just good grain, patient oak, and the occasional questionable decision. This is the part worth bottling.
